Caring for Cast Iron

Cooking and baking with cast iron is a rewarding endeavor but it does require careful care. Here are a few tips to help you keep your cast iron in peak condition and ready to use whenever you need it.

Cleaning

Cast iron should never be washed with soap, as this can strip away the protective seasoning you have built up over time. For most cooking uses, simply wiping the surface with a paper towel or cloth in between uses is enough. If you need to scrub a little harder, use a brush made out of natural fibers.

Oiling

It's important to season your cast iron regularly to keep it rust-free.To do this, scrub the surface with a stiff brush and hot water, then coat with vegetable oil. Place it in a preheated oven, set at 350°F, for about an hour. Once cool, wipe the oil off any excess.

Storing

To avoid rust, store your cast iron in a dry, cool place. You can also prevent rusting by storing it with a paper towel or cloth on the interior.

Use

When using cast iron, be sure to preheat the pan over medium heat for a few minutes, as this helps build up the seasoning layer again. When finished cooking, cool the pan away from water; this helps to prevent corrosion.
