There is no exact rule covering this. However, most writers do not capitalize in that case. Side note: When writing in plain text, like here, where you can't create a real dash, you put spaces around the hyphen to denote that it is supposed to be a dash, not a hyphen. "I didn't - as far as the - again, what I wanted to do..."
