When food is contaminated with listeria, it causes the bacterial infection called listeriosis. Through the bloodstream, the bacteria enter different organs, predominantly accumulating in the spleen and liver. In these organs, bacteria invade macrophages causing their death. The survived macrophages multiply and spread through the bloodstream to the organs and tissues of the body. Listeria infects the central nervous system and can cause meningitis and encephalitis.
